Hog casing – General Information
Our raw materials, the so called runners, are obtained from selected and EU-certified slaughterhouses in Europe and various provinces in China. After careful processing they are selected in one of our production plants and refined according to your request.
Our hog casings are available in calibre 26/28 till 48/+.
The worldwide established measurement unit is the so-called „Hank“:
1 Hank = 100 Yards = 91.4 meter
It's not possible to select always exactly 91.4 meter, because the calibre or the length per piece would suffer then. To avoid this, the general rule is that the measurement can vary between 88 to 92 meter but has to be 91.4 meter in average within 10 Hanks.
Hog casings are common used for the following sausage types:
Fried and grill sausage, Bockwurst (boiled sausage), Bavarian style veal sausage, Knackwurst, Rohpolnische, Mettenden, Seasoned flat sausage, Cabanossi and also Blood and Liver sausage
